Strawberry Vanilla Balsamic Shortcakes

Strawberry Vanilla Balsamic Shortcakes

Ingredients:

  • 1 pound fresh strawberries, sliced
  • 2 tablespoons Strawberry Balsamic Vinegar
  • 1 tablespoon sugar or maple syrup
  • 2 cups whipped cream or coconut cream
  • 6 shortcakes or biscuits
  • 1 tablespoon Vanilla Olive Oil (for drizzling)

Instructions:

  1. In a bowl, toss the sliced strawberries with strawberry balsamic vinegar and sugar. Let sit for 10-15 minutes to macerate.
  2. Slice the shortcakes or biscuits in half.
  3. Layer the bottom half of each shortcake with macerated strawberries and whipped cream.
  4. Place the top half of the shortcake on top and drizzle with vanilla olive oil.
  5. Garnish with extra strawberries and serve immediately.
