Strawberry Vanilla Balsamic Shortcakes
Ingredients:
- 1 pound fresh strawberries, sliced
- 2 tablespoons Strawberry Balsamic Vinegar
- 1 tablespoon sugar or maple syrup
- 2 cups whipped cream or coconut cream
- 6 shortcakes or biscuits
- 1 tablespoon Vanilla Olive Oil (for drizzling)
Instructions:
- In a bowl, toss the sliced strawberries with strawberry balsamic vinegar and sugar. Let sit for 10-15 minutes to macerate.
- Slice the shortcakes or biscuits in half.
- Layer the bottom half of each shortcake with macerated strawberries and whipped cream.
- Place the top half of the shortcake on top and drizzle with vanilla olive oil.
- Garnish with extra strawberries and serve immediately.
