Holiday Fig & Vanilla Crostini

Ingredients:

  • 1 baguette, sliced into 1/2-inch thick pieces
  • 3 tbsp Vanilla EVOO
  • 1 cup ricotta cheese (or cream cheese for a richer option)
  • 2 tbsp Fig Balsamic
  • Fresh thyme leaves or chopped fresh rosemary (optional, for garnish)
  • 1/4 cup crushed walnuts or pecans (optional, for crunch)
  • Pinch of sea salt

Instructions:

  1. Prepare the Baguette:

    • Preheat your oven to 375°F (190°C).
    • Arrange the baguette slices on a baking sheet.
    • Brush each slice lightly with Vanilla EVOO on both sides.
  2. Toast the Crostini:

    • Bake the baguette slices for 8-10 minutes, flipping halfway through, until golden and crispy.
    • Remove from the oven and let cool slightly.
  3. Assemble the Crostini:

    • Spread a generous layer of ricotta cheese (blended with vanilla evoo) on each toasted slice.
    • Drizzle with Fig Balsamic for a touch of sweetness.
  4. Garnish:

    • Sprinkle with fresh thyme leaves or rosemary for a festive, herbal note.
    • Add a pinch of sea salt to enhance the flavors.
    • If desired, top with crushed walnuts or pecans for added texture and a nutty crunch.
  5. Serve:

    • Arrange the crostini on a serving platter and enjoy as an appetizer or snack.
    • Best served fresh, but can be prepared up to 2 hours ahead and stored at room temperature.
