Lemon Olive Oil Grilled Shrimp Skewer
Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 tbsp **Lemon Infused Olive Oil**
- 2 cloves garlic, minced
- 1 lemon (zested and juiced)
- 1 tbsp fresh parsley, chopped
- Salt and pepper to taste
- Optional: Lemon wedges for serving
Instructions:
1. **Marinate the Shrimp**: In a bowl, combine the **Lemon Infused Olive Oil**, garlic, lemon juice, lemon zest, parsley, salt, and pepper. Add the shrimp and toss to coat. Let it marinate in the fridge for 15-20 minutes.
2. **Preheat the Grill**: While the shrimp is marinating, preheat your grill to medium-high heat.
3. **Skewer the Shrimp**: Thread the shrimp onto skewers, making sure not to overcrowd them.
4. **Grill the Shrimp**: Place the skewers on the grill and cook for 2-3 minutes per side, until the shrimp are opaque and cooked through.
5. **Serve**: Garnish with extra parsley and lemon wedges. Serve over rice, quinoa, or a light salad.
