Ingredients

1 lb fresh carrots, peeled and trimmed (rainbow carrots if available)

2 Tbsp Roasted Walnut Oil

1 ½ Tbsp Maple Balsamic Vinegar

1 tsp Dijon mustard

1 tsp pure maple syrup (optional, for extra caramelization)

Kosher salt and cracked black pepper, to taste

Fresh rosemary or thyme sprigs for garnish
Instructions

Preheat the oven to 400°F and line a baking sheet with parchment paper.

Whisk together Roasted Walnut Oil, Maple Balsamic, Dijon, and maple syrup in a small bowl until emulsified.

Toss carrots in the glaze mixture until evenly coated; season generously with salt and pepper.

Roast for 25–30 minutes, flipping once halfway, until the carrots are tender and caramelized around the edges.
